Cassata siciliana

Preparazione: 2 ore Cottura: 30 min 6/8 20x30 cm e per cassata Ø 20 cm

Ingredienti

pan di Spagna:
5 uova
220 g di zucchero
220 g di farina
1 bustina di vanillina
Farcia:
700 g di ricotta di pecora ben sgocciolata
370 g di zucchero a velo
40 g di gocce di cioccolato
aroma vaniglia (se gradito)
Glassa/ghiaccia
175 g di zucchero a velo
20 g di albume
25 g di succo di limone
Decorazione:
gelatina di albicocche
500 g di pasta di mandorle
colorante alimentare verde
zucchero a velo q.b.
canditi misti
liquore

Pan di Spagna:  montate a lungo le uova con lo zucchero fino ad ottenere una battuta ben areata, gonfia e spumosa.

Aromatizzate con la vanillina. Setacciate sulla massa la farina amalgamandola, poi versate il composto nello stampo rettangolare imburrato e infarinato e infornate a 180° per 25/30 minuti.

Sfornate il pan di Spagna, sformatelo e lasciatelo raffreddare su una griglia. Foderate lo stampo per cassata con pellicola e coprite il fondo con un disco di pan di Spagna tagliato a misura.

Tagliate anche delle fette alte circa 5 cm e con i lati leggermente a trapezio per foderare agevolmente il bordo dello stampo.

Passate nel setaccio la ricotta, unite lo zucchero a velo e l’aroma, poi sbattete fino a renderla cremosa.

Aggiungete le gocce di cioccolato, quindi riempite il guscio di pan di Spagna livellando.

Coprite con un secondo disco di pan di Spagna tagliato a misura e appoggiatevi sopra un piatto premendo leggermente.

Mettete in frigo per 8 ore. Sformate la cassata sulla gratella lasciando sotto il piatto per maneggiarla più agevolmente e pennellatela con la gelatina di albicocche calda.

Stendete a 3/4 mm di spessore su un foglio di carta da forno spolverato con zucchero a velo la pasta di mandorle  colorata con una puntina di colorante verde  e fasciate il bordo del dolce lasciando qualche mm di abbondanza, poi eliminate con un pennello intinto in poco liquore bianco lo zucchero a velo residuo.

Preparate la glassa sbattendo gli ingredienti indicati, trattenetene da parte un paio di cucchiai e versatela sulla superficie della cassata ricoprendola.

Rinforzate la glassa avanzata con altro zucchero a velo e, con un sac à poche con bocchetta tonda piccola, procedete ad apporre i puntini sul bordo e il decoro sulla fascia verde.

Riponete di nuovo in frigo per alcune ore e, prima di servire, completate il centro del dolce con una guarnizione di canditi.

Fase 1. Foderate lo stampo per cassata con pellicola e coprite il fondo con un disco di pan di Spagna tagliato a misura.
Fase 2. Tagliate anche delle fette alte circa 5 cm e con i lati leggermente a trapezio per foderare agevolmente il bordo dello stampo. Fase 3. Passate nel setaccio la ricotta, unite lo zucchero a velo e l’aroma, poi sbattete fino a renderla cremosa.
Fase 4. Aggiungete le gocce di cioccolato
Fase 5. Stendete a 3/4 mm di spessore su un foglio di carta da forno spolverato con zucchero a velo la pasta di mandorle colorata con una puntina di colorante verde.
Fase 6. Eliminate con un pennello intinto in poco liquore bianco lo zucchero a velo residuo.
Fase 7. Versate due cucchiai di glassa sulla superficie della cassata ricoprendola.
Fase 8. Con un sac à poche con bocchetta tonda piccola, procedete ad apporre i puntini sul bordo e il decoro sulla fascia verde.
